Five cards are dealt face-down to each player, after which the dealer deals eight community cards face-down in the center of the table. These eight cards are dealt in two columns of four cards in each column; hence, in four pairs.
The dealer chooses one pair of the four, and flips both cards face-up, followed by a betting round. The dealer then flips up a second pair, following by a betting round, followed by a third pair, betting round, fourth pair, final betting round.
Players make their hand with the five cards dealt to them and any one pair of community cards of the four set pairs. This is not to say any two of the community cards, but rather any set pair of community cards as the dealer has dealt four pairs.
